A true classic of Liguria, the pandolce genovese is the typical Christmas sweet of the region. It has ancient origins. From the time of the Pharaohs, it was customary to make enriched sweet bread with raisins. I had the pleasure of meeting Carla Spilak this weekend at the Broadway Market Christmas Fair. Carla’s cookies are delicious and healthy too. She makes several different flavors and they are all fantastic!

The cookies are organic and dairy free. She uses the absolute highest quality ingredients including: spelt flour, evaporated cane juice, and coconut oil.
